Peanutty Chicken and Fruit Salad
1 - 8 oz. package cream cheese, soften
1 8 oz. container vanilla yogurt
¼ cup creamy peanut butter
½ cup orange pineapple frozen juice concentrate
1/8 teaspoon Cayenne Pepper
1 ½ pound package boneless skinless chicken breasts, cooked
1 ½ cups seedless green grapes. Uncut
1 ½ cups seedless red grapes, uncut
1 cup pineapple wedges
1 cup green granny smith apple, cut into ½” pieces
¾ cup peanuts, chopped, divided
- In a large bowl, mix together cream cheese, yogurt, peanut butter frozen juice concentrate and cayenne pepper. Cut and shred chicken making pieces bite size and stir into dressing. Make sure all fruits are dry, rinse apple pieces in fruit juice to prevent browning, then add the fruits, stirring well to coat. Add ½ cup peanuts into salad. Place lettuce onto serving plate or bowl, spoon in salad and sprinkle with remaining peanuts.
