Eat More Peanuts
1 cup dark corn syrup
¾ cup creamy peanut butter
1 ½ cups dark chocolate chips
2 ½ cups chopped salted peanuts (optional: reserve ¼ cup for garnish)
1 tsp. Vanilla
Combine syrup, peanut butter and chocolate chips in a pan and boil over low heat for 3 minutes.
Stir constantly, taking great care not to scorch the bottom.
Add chopped peanuts and vanilla. Blend until peanuts are completely coated. Let rest 1 minute, then spread on a well greased 13x 15” cookie sheet. If desired, garnish with finely chopped peanuts.
Let cool for 15 minutes, then cut into desired size pieces or bars, using a rotary cutter.
When completely cooled this delicious candy can be wrapped individually for future use, or placed in a container with waxed paper separators.
