Ingredients:
1 cup granulated sugar
½
cup water
1 teaspoon ground cinnamon
½
teaspoon ground nutmeg
½
teaspoon ground cloves
3 cups roasted shelled peanuts
Boil sugar, water and spices until syrup reaches hard crack
stage (293 degrees). Drop peanuts into syrup. Stir until
nuts are coated. Pour out on foil; allow to cool. Store in
an air tight container.
Yields 1 ½ pounds
Seasonings to complement roasted peanuts include salt, seasoned
salt, onion salt or powder, garlic salt or powder, paprika,
chili powder, Cajun seasoning mix, cayenne, jalapeno pepper,
Old Bay seasoning and grated parmesan cheese.
