Ingredients:
4 cups granulated sugar
2/3 cup light corn syrup
2/3 cup 1 half and half
2/3 cup water
1/4 teaspoon salt
2 teaspoons vanilla extract
1 cup peanut butter
1 cup chopped, roasted peanuts
2 (1oz.) squares unsweetened chocolate, melted
In a heavy 3-quart saucepan combine sugar, corn syrup, cream,
water and salt. Cook over medium heat, stirring constantly
until sugar is dissolved. Brush sides of pan with a little
water to prevent crystals from forming. Bring mixture to
a boil and cook to 238 degrees or soft-ball stage on a candy
thermometer. Remove from heat and let stand10 minutes. Beat
in vanilla and peanut butter until fudge is thick and creamy
and loses its gloss. Stir in peanuts. Divide fudge in half.
Stir in melted chocolate into one-half of the peanut butter
fudge and then pour into a buttered 9-inch square baking
pan. Spoon remaining fudge on top of chocolate and swirl
with a spoon to give a marble effect. Garnish with peanuts.
Cool and cut into squares.
Yields about 3 pounds.
