Veggie & Peanut Sauce Quesadilla

Squash, sliced & chopped
Red and Green Bell pepper, sliced
Onion, sliced & chopped
1 Tablespoon peanut oil
1 Tablespoon peanut butter
Dash of hot pepper sauce
2 Tablespoons of water
Heat peanut oil in wok. Once warm, add in squash, zucchinni, red and green bell pepper. Sautee veggies until tender. Add peanut butter, dash of hot pepper sauce, water, salt and pepper.

On a heated and greased griddle, place flour tortilla with cheese on one side and veggies on the other side. As cheese melts, fold in half and brown both sides.

Once brown, remove from griddle and cut to serve.
