Pork or Chicken Satay

Marinade:
6 oz. plain yogurt
6 oz. creamy peanut butter
6 oz. pineapple juice
1 Tbsp. grated ginger
1 Tbsp. lime juice
2 Tbsp. rice vinegar
1 Tbsp. red chili pepper paste
2 lbs. pork or chicken

Directions:
Whisk ingredients together in a mixing bowl. Cut meat into stips appropriate to thread onto skewers. Mix meat strips into sauce and marinate in the refrigerator for at least one hour to overnight. Thread meat onto skewers and grill. Serve warm with satay sauce.

Sauce:
6 oz. can pineapple juice
2 Tbsp. rice vinegar
1 Tbsp. soy sauce
1 Tbsp. Teriyaki sauce
1 Tbsp. red chili pepper paste
1 Tbsp. ground ginger
1 Tbsp. lemon juice
1 Tbsp. lime juice
3/4 cup creamy peanut butter

Directions:
In a sauce pan, mix all ingredients except peanut butter over low heat until warm. Remove from heat and whisk in peanut butter. Serve with warm, marinated meat.
