Glazed Peanut Bread

Ingredients:

1 ½ cups hot milk
¾ cup peanut butter
¾ cup brown sugar
1 egg
2 cups all purpose flour
4 teaspoons baking powder
¼ teaspoon salt
¾ cup chopped roasted peanuts

In a large mixing bowl slowly pour hot milk over peanut butter, mixing at slow speed until blended. Add brown sugar and egg. Stir together flour, baking powder and salt. Add to peanut butter mixture. Beat at medium speed to moisten flour (about 15 seconds). Stir in peanuts. Spoon batter into a greased 8 ½ x 4 ½ - inch loaf pan. Bake in a preheated 325 degree oven for one hour or until cake tester comes out clean. Remove loaf from oven, let stand in pan 10 minutes. Turn out of pan.

Glaze:
4 teaspoons lemon or orange juice
1/4 cup sugar

Combine sugar and lemon juice; brush glaze on hot bread. Cool.

Yields 1 loaf
