PB&J Parfait



Ingredients:
(For the POM Jam)
1 cup pomegranate juice
6 Tb chia seeds

(For the Peanut Butter Layer)
1 cup smooth peanut butter
½ cup full fat coconut milk from the can

Fresh berries (strawberries, blackberries, blueberries, pomegranate seeds)

Directions:
(For the POM Jam)
Whisk together Pomegranate juice and chia seeds. (Putting in a mason jar and shaking is an easy way to mix them and then the chia seeds will plump up overnight!)
Refrigerate overnight.

(For the Peanut Butter Layer)
Whisk together peanut butter and coconut milk.
Refrigerate overnight.
