Georiga National Fair Culinary Demonstration with Georgia Peanuts

Peanut Butter Pumpkin Mousse- Ingredients:
- 2 cups Libby’s Easy Pumpkin Pie Mix
- 2 cup creamy peanut butter
- 4 Tbsp. powdered sugar
- 1 cup heavy whipping cream
- Candy corn & Reddi Wip for garnish

Directions:
Coat a skillet with cooking spray and cook pumpkin pie mix for 3-4 minutes cooking constantly. Let cool.
With a hand mixer, combine pumpkin pie mix and peanut butter. Add powdered sugar and beat. Add whipping cream and beat on high speed for 3-4 minutes until light and fluffy. Pour into serving dishes and chill for one hour. Garnish with Reddi-wip and candy corn before serving.
Makes 8 six ounce servings.
Snickers Blondies- Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp kosher salt
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/2 cup firmly packed light brown sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 12 fun-size snickers candies, quartered

Directions:
Heat oven to 350 degrees F. Line an 8-inch square pan with parchment paper, leaving an overhang on two sides.
In a medium bowl, whisk together the flour, baking powder and salt. Using an electric mixer, beat the butter and brown sugar in a large bowl until light and fluffy, about 3 minutes. Beat in the egg and vanilla. Reduce speed to low and gradually add the flour mixture, mixing just until incorporated; fold in the snickers.
Spread the batter into the prepared pan. Bake until golden and a wooden pick inserted into the center comes out with moist crumbs attached, 25 to 30 minutes. Let the blondie cool completely in the pan. Using the overhangs, transfer the blondie to a cutting board and cut into 16 bars.

Goober-ry Trail Mix- Ingredients:
- 1 cup roasted peanuts
- 1 cup peanut butter morsels
- 1 cup candy corn
- 1 cup Reese’s Pieces
- 5oz. bag dried cherries
- 1 cup golden raisins
- 5 oz. bag dried mixed berries

Directions:
Mix all ingredients in a mixing bowl. Put a generous serving in snack size zipper bags.
