Peanut Chicken Salad

Dressing Ingredients
1/2 cup creamy peanut butter
1/3 cup rice vinegar
1/3 cup low sodium soy sauce
1 tablespoon sesame oil
1/4 cup vegetable oil
1 lime, juiced
3 tablespoons honey
1 tablespoon sugar
2 cloves garlic, grated
1 tablespoon ginger, fresh, grated
2 tablespoons sweet chili sauce
salt to taste
water (use to thin dressing to desired consistency)
Salad Ingredients
3 cups rotisserie chicken, pulled, shredded
3-4 cups napa cabbage, shredded
2 cups carrots, grated
1/2 cup green onions, sliced
2 sweet red chili peppers, sliced
1 cup english cucumber, seeded and sliced
2/3 cup chopped peanuts
Dressing: In a blender place peanut butter, vinegar, soy sauce, sesame oil, vegetable oil, lime juice, honey, sugar, garlic, ginger, and chili sauce. Blend until smooth taste and add salt if desired, also may need 2-3 Tablespoons of water to get the desired consistency.

Salad: In a bowl toss together chicken, cabbage, carrots, onions, peppers and cucumbers. Dress the salad with dressing and add peanuts.
