Peanut Chicken

Ingredients
8 chicken tenderloins
Salt and pepper
2 eggs beaten
1 1/2 cups of peanuts, chopped in food processor
Oil for frying
1/3 cup of creamy peanut butter
1 5.3 Oz. container of vinilla greek yougurt
2 tablespoons of frozen orange juice concentrate
3 tablespoons of pineapple juice
1/8 teaspoon of cayenne pepper
1/4 teaspoon of red chilli flakes

Directions
Salt and pepper chicken pieces. Place eggs into a small bowl and peanuts into another bowl. Dip the chicken into the eggs, and then coat in peanut mixture, pressing to coat. Place chicken into oil that has been heated to 375 degrees. Cook for approximately 3 minutes per side or until golden brown. Drain on paper towels.

While chicken is cooking, whisk together the smooth creamy peanut butter, greek yogurt, orange juice concentrate, pineapple juice, cayenne pepper, and chilli flakes. Place in a bowl as a dipping sauce for peanut chicken pieces.
