Peanut Caramel Tarts

1 1/4 cups semisweet chocolate chips
6 tablespoons unsalted butter
1/2 teaspoon vanilla
1/8 teaspoon salt
5 large eggs, separated
1/4 teaspoon cream of tartar
1/3 cup granulated sugar
2 5oz. bags of chewy caramels, unwrapped
1/4 cup heavy whipping cream
2 cups peanuts

Chocolate Peanut Butter Ganache Ingredients:
1/4 cup heavy whipping cream
1/2 cup semisweet chocolate chips
2 tablespoons smooth peanut butter
Preheat oven 275 degrees. Lightly coat 6, 4" tart pans with cooking spray.
Place chocolate and butter in a large bowl and microwave on high until melted, about 1 minute. Stir in vanilla and salt. Cool slightly, Stir in egg yolks.
Place egg whites and cream of tartar in a bowl, beat with electric mixer on high until medium peaks form. Lower speed to medium and add suagr 1 tbsp. at at time, turn to high, beat until stiff peaks form. Stir a little egg white mixture into chocolate mixture. Gently fold in remaining egg white mixture. Divide batter evenly in pans. Bake until set in center 25 to 27 minutes. Cool about 20 minutes.
Put caramels and whipping cream into a bowl, microwave 1 minute and stir. Then microwave 30 second intervals until melted and creamy. Stir in peanuts. Spoon on top of each tart.
Chocolate Peanut Butter Ganache Directions: Place cream into a glass measuring cup and microwave for 30 seconds, add chocolate and peanut butter. Let set for a minute, stir until smooth. Drizzle over tarts.
